• Question: If we don’t know what color the skin of dinosaurs are, then why are they given colors. For all we know, they could be pink.

Brilliant question and I can only guess.
When I was young I always wondered, if all these dinosaur museum are just for show. I mean, how could people possibly know that they existed and how long ago etc. Now I know that it is possible to know these things exactly.
But the color of the skin is a tricky one, because as you pointed out nobody saw them.
I guess people picked the skin colour based on the animals that these dinosaurs evolved into (if they evolved), a bit like in pokemon, where they also barely change their color.
And I guess the rest just got random colors based on food, etc. and colors that are common for reptiles (brown, green-ish, red-ish, etc.).
      Hope this helps a bit
